Creamy Parmesan Italian Sausage Ditalini Soup

  • Items required:

    1 pound of Italian sausage without bones
    1 tablespoon of oil
    1 small diced onion
    2 cloves of garlic, finely chopped, and 1 can (14.5 oz) of diced tomatoes without liquid.
    Containers of chicken broth
    1/2 cup of thick cream

  • 1 cup of small pasta such as elbow, ditalini, or small spaghetti.
    1/2 cup of grated Parmesan cheese
    One-half teaspoon of dried basil
    Oregano, 1/2 teaspoon
    Add salt and pepper to taste.
    Fresh parsley, chopped (to sprinkle on top)

What you should do:

To prepare the sausage, put a big pot on medium heat and add the olive oil. After it turns brown, put in the Italian sausage and break it apart as it cooks. Remove the sausage from the pan and set it aside.
Add the herbs to the sauté.
Add the finely chopped garlic and onion to the same pot. After cooking for three or four minutes, the onion should look see-through.
Add the tomatoes and broth.

Add the chicken broth, dried oregano, dried basil, and drained diced tomatoes. Heat the mixture until it starts to boil.
Heat the liquid and pasta until it boils. Then, lower the heat and let it cook gently for 8 to 10 minutes, stirring from time to time, until the pasta is cooked but still a bit firm.
Lower the heat to medium-low to make it creamy. To make the soup thicker, put in grated Parmesan cheese and heavy cream. Mix well until the cheese melts.
Put the cooked sausage back in the pot with the soup and mix it. Try the food and season with salt and pepper to your liking.
Put the soup in separate bowls, add some chopped parsley on top, and enjoy this delicious Italian meal! Enjoy your evening!
