This Potato Kielbasa Soup is hearty, savory, and comforting, packed with tender potatoes, smoky kielbasa, and aromatic herbs. A perfect one-pot meal to warm up your chilly day!

Ingredients (Serves 4-6)

For the Soup:

1 lb kielbasa, sliced into bite-sized pieces 🌭

4 medium potatoes, peeled and diced 🥔

2 celery stalks, chopped

4 cups chicken broth

1 cup milk or half-and-half 🥛

2 tablespoons all-purpose flour

1 teaspoon dried thyme

1/2 teaspoon smoked paprika (optional)

Salt and black pepper to taste

Cook the Kielbasa:

Heat the olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned on both sides, about 5 minutes. Remove the kielbasa with a slotted spoon and set aside.

Sauté Aromatics:
In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until softened and fragrant.
Add Vegetables and Broth:
Stir in the diced potatoes, carrots, and celery. Pour in the chicken broth and add thyme, smoked paprika (if using), salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
Thicken the Soup:
In a small bowl, whisk the flour with the milk or half-and-half until smooth. Slowly stir this mixture into the soup. Cook for another 5-7 minutes, stirring occasionally, until the soup thickens slightly.
Return Kielbasa to the Pot:
Stir the cooked kielbasa back into the soup. Let it heat through for 5 minutes. Taste and adjust seasoning as needed.
Serve and Garnish:
Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve warm with crusty bread or crackers for a complete meal.
Tips for Success
For extra smokiness, try using smoked kielbasa or adding a pinch of smoked salt.
Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
For a lighter version, substitute milk with a non-dairy alternative like almond or oat milk.
